Love Inked

For starters I am such a wuss! Before the needle even touched my arm my heart was pounding, I was sweating, and violently chewing my gum. Poor gum…

I had met with Jeremy from Perfect Image on high recommendations from a few friends. He was awesome at listening to my ideas and adding his artistic touch to it. He didn’t even get mad at me for changing my mind like 4 times.

Well in the end I hyped myself up so much with nerves and it wasn’t even that bad in terms of pain. I am really in love with the final result. Pun intended.

I have this feeling that it’s my first but won’t be my last.

A day without wine is like a day without sunshine

When I received an email from the Peninsula Ridge Estate Winery asking me to photograph their winery and restaurant I was SO EXCITED! My hubby and I have visited this winery several times over the years and there are so many reasons why we keep coming back. This past weekend we got to experience The Ridge like never before!!  I fell in love with wine country all over again.

The restaurant here is AMAZING! The chef puts his heart into each dish! We tried many new ingredients and flavours. Every bite was mouth-watering!

At Home With Levi

I absolutely love photographing newborns and seeing first time parents. It just warms my heart. In my home studio I have a nice little space where I offer newborn shoots but today I got to spend a little bit of time in the Kelly’s home to capture their new life with two week old Levi. There is something soft and warm about in home sessions.  The natural light, the comfort of home and a cozy little, sleepy bundle of joy made my day today!

A salad doesn’t need lettuce

Salads are one of my favourite foods. You can change them up in so many different ways and they are delicious and healthy. You can have it as a meal or as an appetizer. You can add nuts and chicken and even fruit!  I don’t think I have one favourite type of salad, do you?

Well this week I received my order of Acropolis Olive Oil and Balsamic and was inspired!  If you have never tried the Acropolis brand I highly recommend it! The flavours are amazing.

I decided to make a simple yet flavourful Caprese Salad.

You need:

Tomatoes

Fresh Basil

Acropolis Olive Oil

Acropolis Mousto Balsamic

Pepper

Basil Pesto

Boccaccini Cheese

Cut the tomatoes and boccaccini into thick slices. Layer on a plate: tomato slice, boccaccini, pesto, tomato, boccaccini, pesto. Place one fresh basil leaf in the middle and one on top. Sprinkle a pinch of pepper and drizzle Olive Oil and Balsamic.  Voila!

Cold and Flu season calls for Chicken Soup

So it’s cold and flu season and of course I end up getting some kind of crazy cold last week that put me on the couch for four days! With a diet of mostly tea, Neocitron and water I needed something in my tummy. Chicken Soup was the answer! After all that’s what mommy always made for me when I was sick as a kid so it had to make me feel better. I had some leftover chicken from dinner the night before and decided to make my own version of Chicken Soup.

To make this yourself you will need:

Celery

Carrots

Onion

Chicken Stock

Chicken – Cut into pieces

Pepper

Parsley Flakes

 

Give the carrots and celery a nice rough chop and the onion a fine chop. Throw it all into a pot with the chopped chicken and cover with chicken stock. When I don’t make my own chicken stock I like to use the Kitchen Basics brand, I find it to be the most tasty. Season with a few pinches of pepper and parsley flakes and cook on medium heat for one hour. Hearty, delicious and even good for you!

 

 

Here comes 2013

Another year has come to an end and what a year it’s been.  This time last year my life was changing. I had just decided to quit my day job and was going through some health issues resulting in a whole lot of stress. I rang in the New Year quietly at home with the love of my life and tried to think about the future in a positive light. 2012 ended up being a year of changes. After finding a 9-5 job in January I thought great! Work to pay the bills and focus on photography evenings and weekends.  Well it only lasted so long before I started to regret my decision.  Photography is my passion. If I wanted to really do it, I really needed to do it. I chose to go full time with my business and it turned out to be my busiest year so far.

I am so humbled and lucky to have had amazing support on this journey. From my husband to my family to my amazing clients!!! This year has been filled with ups and downs but reflecting back on it, the ups certainly outweigh the downs. It’s truly amazing the life you can have if you just focus on the important things. I feel more than I ever have before that relationships and creating memories and experiences are what is on the top of the list for me. This year has brought me closer with to family & friends and allowed me the time to spend with them. Networking with amazing local professionals and meeting new clients and having them turn into amazing friendships is more than I could have expected. Spending time at the Farmers Market every week and enjoying the taste of fresh food, cooking up recipe after recipe has been so refreshing. Watching so many couples in love say “I do”, experiencing pregnancy and then meeting their bundles of joy is so beautiful.

I am very much looking forward to 2013. I have thought about what I want my life to look like and what kind of goals I want to set for the next year. I’m not setting any kind of resolutions but more setting myself up with how I want to live and experience life.

This sign is now printed and hanging in my office to remind me of the things I want to do.

Adult Apple Cider

I have a new favourite holiday drink!!! And if you like apple cider and the delicious taste of cinnamon you must try this.

Warm up a cup of that perfect Wellesley Apple Cider. Take a separate glass and rim it with cinnamon sugar. Add an ounce of Goldschläger Cinnamon Schnapps, then pour in the warm apple cider. Garnish with a cinnamon stick and enjoy! Ahhhh warms your soul!

Pico de Gallo My Way

2 Jalapenos

1 Red Onion

5 Cloves of Garlic

Hand full of Cilantro

1 Lime

5 Large Tomatoes

Olive Oil

 

Chop finely onions, garlic and jalapenos and place into a bowl. I use one whole Jalapeno (seeds and all) and one with the seeds scooped out. Then chop up all the tomatoes into cubes and add it in. Toss in the cilantro and squeeze the juice on one fresh lime in. Add a few dashes of pepper and a drizzle of olive oil and give it a good mix. Let it sit in the fridge for a few hours before serving. So easy right? Now what to do with it…

I like Pico on its own just scooped up with Tostitos  and I also love it on tacos! But the options are endless, smother it all over chicken, use it in a layered nacho dip, top a burger with it, toss it on grilled shrimp! I could go on and on. What would you use it on?

Punta Cana Love

I met Erica almost 7 years ago while on my honeymoon in Cuba. When she met my husband and I, and over the years, she’d sometimes utter the words, ” I want to find a love like yours” to me .. It’s an honour to hear words like that and I knew what she meant by it. A fun and loving partner who is also your best friend. I remember talking to Erica on the phone after her first date with Tim. I could hear the smile in her voice! And I guess the rest is history because last week I had the pleasure of joining a group of over 30 amazing people down in Punta Cana to witness and photograph Erica and Tim’s wedding! It was a beautiful day filled with emotion and excitement. With worry all week that hurricane Sandy might damper on the big day, we woke up on the morning of the wedding to find the weather calm and cloudy. With friends and family watching with support, Erica walked down the aisle to the start of the rest of her life with Tim. Congratulations Tim and Erica, could not be happier for you! I know you found that love you were looking for.
